What to do with all your green tomatoes

If you find that you have more green tomatoes than you know what to do with, simply place them in a cardboard box in a cool, dark location.

  1. Put some newspaper into the bottom of the box.
  2. Place your first layer of tomatoes on it. Do keep them separate so they aren't touching each other.  That way if one goes bad it doesn't affect the rest of them.
  3. Cover with another layer of newspaper
  4. Add more tomatoes
  5. Keep layering to a maximum depth of 3 layers.  You don't want it too deep as it makes it difficult to check how the tomatoes are ripening.
  6. Place the box in a cool, dry place and be sure to check the tomatoes at regular intervals.
